Avocado Grilled Cheese

  • Large skillet

Ingredients

  • 1 avocado cut in half, seeded and peeled.
  • salt and pepper to taste
  • 2 slices bread
  • 1 tbsp butter
  • 1 cup shredded mozarella cheese

Optional topping:

  • tomato

Instructions

  • In a small bowl mash the avocado with a fork. Add the salt and pepper and mix to combine.
  • Butter one side of each slice of bread and place in a skillet over medium-low heat.
  • Add the cheese to the top of both slices of bread and continue to toast the bread until the bottoms are slightly golden. Once golden place lid on pan to melt the cheese.
  • Once the cheese has melted remove the bread from the skillet and place on a plate. Add the mashed avocado.
  • Slice and serve immediately.

Notes

  • Make sure to butter the bread generously, or you won’t get that beautiful golden crust on the bread.
  • You can spread mayonnaise on the bread if you run out of butter.
  • If making multiple servings, wipe the pan down between each sandwich to remove any unpleasant burnt flavors.
  • A serrated knife is the easiest way to cut a grilled cheese sandwich in half. 
  • It’s much easier to spread softened butter on the bread. Try to bring the butter to room temperature ahead of time.
