Zucchini Pizza Bites

- 1 large zucchini
- cooking spray
- salt to taste
- ½ cup marinara sauce
- 1 tsp oregano
- 2 cups mozzarella cheese
Preheat the oven to 375°F.
Cut the zucchini into ½” thick rounds.
Spray each round with cooking spray on both sides and place on a baking sheet lined with parchment paper.
Add marinara sauce and then a sprinkle of oregano to each round. Then top each round with mozzarella cheese.
Bake for 10 to 12 minutes or until the cheese begins to brown.
Optional: garnish with basil or red pepper flakes.
- Avoid cutting the zucchini rounds too thin. They will become floppy, and your sauce and cheese can slide off!
- For even slices, you can use a mandoline slicer.
- If you are worried that the zucchini is too watery, you can salt the rounds beforehand. Doing so will dry out any excess moisture, and you can just pat them dry with a paper towel before adding the toppings.
- If you only have small zucchinis, you can slice them diagonally for a slightly larger round.
