Equipment

  • Large skillet
  • Mixing bowl

Ingredients

  • 1 lb green beans I like the French green beans
  • 1 tbsp olive oil
  • 1 shallot sliced thin
  • 2 cloves garlic grated
  • ½ tsp salt
  • ¼ tsp pepper
  • red pepper flakes optional garnish

Instructions

  • In a large mixing bowl, add the green beans, olive oil, shallots, garlic and salt and pepper. Toss to combine.
  • In a large pan over medium heat, add all of the ingredients from the mixing bowl and saute for 5 to 7 minutes until the green beans are cooked through but still slightly al dente.
  • Garnish with red pepper flakes for a little spice, if desired.

Notes

  • If you’re not confident that you can slice the shallots thinly and evenly, you can use a mandolin.
  • You can trim the green beans by lining them up on a cutting board, facing the same way, and slicing off the tops with the stems. The stems are not pleasant to eat as they’re tough and woody, so make sure to remove them.
  • Make sure to use a large skillet so you don’t steam the shallots and green beans. It’ll also be much easier to saute.
  • Some delicious add-ins to the shallot green bean dish include crispy chopped bacon, shaved parmesan, chopped nuts, or a few handfuls of greens like arugula or baby spinach!
  • I like to use French green beans, also known as haricots verts. You'll have to increase the cooking time if you use a larger variety of green beans.
