Cucumber Margarita

- lime wedges for rimming glass
- coarse salt for rimming glass
- 1 medium cucumber peeled, and cut into chunks for blending
- 1 oz silver tequila
- 1 oz lime Juice
- ½ oz agave
- ice for shaking and serving
Prepare glass by running a lime wedge around the rim of the glass to moisten, then dip into a shallow dish of coarse salt. Angle the glass down to get a good coating of the salt. Set aside.
To make the cucumber juice, blend the cucumber in a blender until the mixture is smooth (optional to add a splash of water to smooth out more) and strain the liquid through a mesh strainer to get rid of any pulp.
Fill a cocktail shaker with ice, cucumber juice, tequila, lime juice and agave and shake vigorously for 30 seconds then strain into salt rimmed glass filled with more ice.
- To make this into a spicy cucumber margarita, the night before serving, combine sliced jalapeño with your tequila to infuse the flavor. Remove the jalapeño the next day before using the tequila.
- To make it sweeter, simply add more agave.
- Change up the salt on the rims. Use sea salt, ancho chili salt, salt mixed with lime zest, salt mixed with lemon zest, etc.
- A plate or shallow bowl is best for salting the rim of your glass. This helps prevent wasting excessive salt.
- Be sure you are using freshly squeezed lime juice and not bottled lime juice for the best flavor.
