Grilled Romaine Heart Salad

Get ready for summer with this delicious grilled romaine heart salad. The sweetness of the cherry tomatoes contrasts with the super easy to make vinaigrette dressing. I don't usually grill lettuce but for this recipe, it adds a hint of smokiness that tastes amazing!

Ingredients

  • 2 - 3 ears fresh sweet corn
  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons sherry vinegar or red wine vinegar
  • 1 tablespoon Dijon-style mustard
  • 2 hearts of romaine lettuce halved lengthwise
  • 1 cup grape and/or pear tomatoes red, yellow, and/or green, quartered
  • Sea salt and freshly ground black pepper

Instructions

  • 2 - 3ears fresh sweet corn
  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons sherry vinegar or red wine vinegar
  • 1 tablespoon Dijon-style mustard
  • 2 hearts of romaine lettuce, halved lengthwise
  • 1 cup grape and/or pear tomatoes (red, yellow, and/or green), quartered
  • Sea salt and freshly ground black pepper

For the salad dressing...

  • ? cup olive oil
  • 1 juice of lemon
  • 1 garlic clove, minced
  • 1 shallot, minced (about 2 Tbs.)
  • 2 tablespoon of raw apple cider vinegar
  • 1 tablespoon zest of lemon
  • 1 teaspoon dijon mustard
  • ¼ teaspoon sea salt (or to taste)
  • fresh ground black pepper

Notes

Feel free to substitute red wine vinegar for apple cider vinegar. My favorite is Bragg's.
