Air Fryer Greek Lemon Potatoes

Ingredients

  • 2 lbs potatoes
  • ¼ cup olive oil
  • 1 lemon juiced
  • 1 tbsp lemon zest
  • 6 cloves garlic grated
  • 2 tsp oregano
  • 1 tsp salt
  • fresh chopped parsley optional garnish

Instructions

  • Cut the potatoes into chunks, about ½” thick.
  • Place the potatoes in a large mixing bowl and add the rest of the ingredients: olive oil, lemon juice, lemon zest, garlic, oregano, and salt. Toss to combine.
  • Add the potatoes into the air fryer basket and cook at 350 F for 25 to 30 minutes, tossing halfway through the cooking time.
  • Garnish with fresh chopped parsley and an additional squeeze of lemon if desired.

Notes

  • If you prefer to use fresh oregano, you can swap the 2 teaspoons of dried oregano to 2 tablespoons of fresh oregano. 
  • Make sure to shake the basket midway through cooking to help the potatoes air fry evenly. 
  • Cut your potatoes into uniform pieces so they cook uniformly. 
  • The cooking time may vary based on your air fryer brand and the size of the model you have. Check the potatoes for doneness at 25 minutes by piercing the potatoes with a fork before continuing. 
  • If you have the time, you can soak the potatoes in cold water for around 15 minutes to help remove some of the starchiness leading to crispier potatoes. Make sure to pat them dry after.
  • When zesting the lemon, make sure only to zest the yellow part. The white layer underneath is bitter.
