Cooked generously with olive oil, lemon, garlic, and oregano, this Greek lemon air fryerpotatoes recipe is so flavorful! You only need a handful of simple ingredients to make this crispy lemon potato recipe, so you can whip it up without running out to the store. 

Thanks to the air fryer, these Greek lemon potatoes are so fluffy on the inside while crispy on the outside. Even better, they’re ready in around 30 minutes! Key Ingredients You Need

Ingredients needed to make air fryer Greek lemon potatoes.
  • Potatoes — You can use any variety of potatoes, but Yukon gold, baby red potatoes, or baby gold potatoes are great options. 
  • Oil — I use olive oil, but you can use any high smoke point oil, such as avocado oil.
  • Lemon — I recommend using fresh lemon juice for the best flavor. You’ll also need lemon zest, so I suggest grabbing a lemon at the store. Don’t skip the lemon zest, as it adds a ton of fresh citrus flavor. 

How to Make Air Fryer Greek Lemon Potatoes

Step 1: Cut the potatoes into chunks, about ½” thick.

Step 2: Place the potatoes in a large mixing bowl and toss with olive oil.

Step 3: Add the lemon juice and lemon zest. 

Step 4: Finish off with the garlic, oregano, and salt. Toss to combine.

Step 5: Add the potatoes into the air fryer basket and cook at 350 F for 25 to 30 minutes, tossing halfway through the cooking time.

Step 6: Garnish with fresh chopped parsley and an additional squeeze of lemon if desired.

Tips For This Recipe

  • If you prefer to use fresh oregano, you can swap the 2 teaspoons of dried oregano to 2 tablespoons of fresh oregano. 
  • Make sure to shake the basket midway through cooking to help the potatoes air fry evenly. 
  • Cut your potatoes into uniform pieces so they cook uniformly. 
  • The cooking time may vary based on your air fryer brand and the size of the model you have. Check the potatoes for doneness at 25 minutes by piercing the potatoes with a fork before continuing. 
  • If you have the time, you can soak the potatoes in cold water for around 15 minutes to help remove some of the starchiness leading to crispier potatoes. Make sure to pat them dry after.
  • When zesting the lemon, make sure only to zest the yellow part. The white layer underneath is bitter.

Frequently Asked Questions

Do I have to peel my potatoes to make wedges?

It is up to you if you’d like to peel the potatoes or not. Just make sure to wash and scrub the potatoes thoroughly, then pat them dry if you keep the skin on. You want to wash off any remnants of dirt. It’s also important to pat them dry as if there is water left on them, the oil and seasoning won’t stick, and the potatoes will end up steaming instead of crisping up.

How do I store leftovers?

Let the air fried Greek lemon potatoes cool to room temperature before transferring them to an airtight container. Store in the fridge for 3 to 5 days. When ready to enjoy, reheat them in the air fryer until they’re heated all the way through.

What can I serve these potatoes with?

Ingredients

  • 2 lbs potatoes
  • ¼ cup olive oil
  • 1 lemon juiced
  • 1 tbsp lemon zest
  • 6 cloves garlic grated
  • 2 tsp oregano
  • 1 tsp salt
