Get ready for summer with this delicious grilled romaine heart salad. The sweetness of the cherry tomatoes contrasts with the super easy to make vinaigrette dressing. I don’t usually grill lettuce but for this recipe, it adds a hint of smokiness that tastes amazing!

Ingredients
- 2 – 3 ears fresh sweet corn
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons sherry vinegar or red wine vinegar
- 1 tablespoon Dijon-style mustard
- 2 hearts of romaine lettuce halved lengthwise
- 1 cup grape and/or pear tomatoes red, yellow, and/or green, quartered
- Sea salt and freshly ground black pepper
Instructions

- 1 tablespoon Dijon-style mustard
- 2 hearts of romaine lettuce, halved lengthwise
- 1 cup grape and/or pear tomatoes (red, yellow, and/or green), quartered
- Sea salt and freshly ground black pepper
For the salad dressing…
- ? cup olive oil
- 1 juice of lemon
- 1 garlic clove, minced
- 1 shallot, minced (about 2 Tbs.)
- 2 tablespoon of raw apple cider vinegar
- 1 tablespoon zest of lemon
- 1 teaspoon dijon mustard
- ¼ teaspoon sea salt (or to taste)
- fresh ground black pepper

Feel free to substitute red wine vinegar for apple cider vinegar. My favorite is Bragg’s.
