Whether you’re sipping on this skinny cucumber margarita poolside on a hot summer day or serving it up with dinner, this cocktail goes with everything. Since it is made with fresh cucumber juice and lime juice, this cocktail is lighter than your traditional margarita and much more refreshing.

Key Ingredients You Need
- Kosher Salt — For that classic margarita vibe, don't skip salting the rim of your glasses!
- Cucumber — Be sure to peel the cucumbers. The skin can cause your drink to be bitter.
- Silver Tequila — Silver is the best tequila for margaritas, but any kind of tequila will work in a pinch.
How to Make Cucumber Margarita
Step 1: Prepare your glass by running a lime wedge around the rim to moisten it, then dip into a shallow dish of coarse salt. Angle the glass down to get a good coating of the salt. Set aside.
Step 2: To make the cucumber juice, blend the cucumber in a blender until the mixture is smooth (optional to add a splash of water to smooth out more).
Step 3: Strain the liquid through a mesh strainer to get rid of any pulp.
Step 4: Fill a cocktail shaker with ice, cucumber juice, tequila, lime juice, and agave.
Step 5: Shake vigorously for 30 seconds.
Step 6: Strain cocktail into salt rimmed glass filled with more ice.
Tips For This Recipe
- To make this into a spicy cucumber margarita, the night before serving, combine sliced jalapeño with your tequila to infuse the flavor. Remove the jalapeño the next day before using the tequila.
- To make it sweeter, simply add more agave.
- Change up the salt on the rims. Use sea salt, ancho chili salt, salt mixed with lime zest, salt mixed with lemon zest, etc.
- A plate or shallow bowl is best for salting the rim of your glass. This helps prevent wasting excessive salt.
- Be sure you are using freshly squeezed lime juice and not bottled lime juice for the best flavor.

You can definitely make a large pitcher of this margarita instead of just one serving at a time. Simply fill a large pitcher with 6 cups of ice and scale up the ingredients by 6-7x.
To get the maximum amount of juice from your limes, make sure they are at room temperature. Then roll them under your hand on a countertop to loosen up the juices and soften it. Cut the limes widthwise and juice with a handheld juicer or juicer attachment.
The brand of tequila I used for this margarita is Don Julio Blanco. It is important to use high-quality tequila when you are making any kind of tequila-based drink because more expensive tequilas will taste much smoother than their cheaper counterparts. If you like a smoky taste, one of my favorite substitutions for this cucumber margarita is to use a Mezcal instead of a normal tequila. Mezcal is made from a bunch of different agaves which give it a smoky and super tasty flavor profile.

Ingredients
