Pizza night is one of my favorite nights, and if I could, I’d have it all the time! Unfortunately, I probably wouldn’t feel great if I was to have pizza every night. So to satisfy those regular pizza cravings, I’ve been making these zucchini bites, a delicious, healthier alternative to pizza.
Loaded with flavor, this quick and simple zucchini pizza recipe requires only five ingredients. It’s also easy enough to make that if you have little ones, they can help with sprinkling the cheese on top. Key Ingredients You Need
- Zucchini — While I usually recommend buying smaller zucchinis, you need each round to be large enough to hold the toppings, so pick a medium to large zucchini. Check for firm, smooth skin that does not have any blemishes or soft spots. You could also use yellow or orange zucchinis as well.
- Marinara sauce — To save time, you can use store-bought marinara sauce or make my homemade Marinara Sauce if you have extra time.
- Mozzarella cheese — I love mozzarella cheese on my pizza bites but if you prefer a different melty cheese, feel free to swap.
How to Make Zucchini Pizza Bites
Step 1: Cut the zucchini into ½” thick rounds.
Step 2: Spray each round with cooking spray on both sides and place on a baking sheet lined with parchment paper.
Step 3: Add marinara sauce to each zucchini round.
Step 4: Sprinkle dried oregano over the marinara sauce.
Step 5: Top each round with mozzarella cheese.
Step 6: Bake for 10 to 12 minutes or until the cheese begins to brown.
Tips For This Recipe
- Avoid cutting the zucchini rounds too thin. They will become floppy, and your sauce and cheese can slide off!
- For even slices, you can use a mandoline slicer.
- If you are worried that the zucchini is too watery, you can salt the rounds beforehand. Doing so will dry out any excess moisture, and you can just pat them dry with a paper towel before adding the toppings.
- If you only have small zucchinis, you can slice them diagonally for a slightly larger round.
Frequently Asked Questions
Since each zucchini pizza bite is so small, be sure not to overload them with toppings. Some of my other favorite toppings are mini pepperoni slices (you can also cut regular ones into quarters), sliced mushrooms, crumbled bacon, finely diced bell peppers, and finely diced onions.
There’s no need to peel your zucchini as the skin is edible. You might consider peeling the zucchini skin if it is waxy. Be sure to wash the zucchini before slicing and topping.
You can prepare these zucchini bites a day beforehand. Top the zucchini slices and cover them with plastic before storing them in the fridge. Bake them when you’re ready to eat.
You can store leftover zucchini bites in an airtight container in the fridge for up to 3 days. I do not recommend freezing the leftovers as the texture of the zucchini may change. Reheat in the oven.
